250 grams dark Chocolate
4 egg whites
½ organic lemon
200 grams sugar
2 teaspoons Vanilla sugar
1 pinch salt
200 grams Coconut flakes
Kogel mogel (for decoration)

Preparation steps

1.

Preheat the oven to 140°C (approximately 285°F).

Line 2 baking sheets with parchment paper. Prepare a hot and a cold water bath.

3.

Beat egg whites, lemon zest and juice, sugar, vanilla sugar and salt over a hot water bath until mixture is glossy, about 10 minutes.

Transfer mixture to cold water bath and beat until light and fluffy. fold in coconut. 

5.

Dollop mixture onto prepared baking sheets, 2 teaspoons at a time. Bake for about 20 minutes until light yellow, then remove and let cool.

Coarsely chop chocolate, melt in a double boiler and remove from heat. Dip each macaroon in melted chocolate. Place on a wire rack and cover with sugar eggs. Let rest to solidify and serve.
