1 Baking sheet, 1 Bowl, 1 Small bowl, 1 Tablespoon, 1 Teaspoon, 1 Fine grater, 1 Hand mixer, 1 Parchment paper, 1 Piping bag, 1 Oven rack, 1 Rubber spatula

Preparation steps

Rinse lime in hot water, wipe dry and finely grate zest. Mix lime zest with shredded coconut and flour in a bowl.

Squeeze juice from lime. Separate eggs (reserve yolks for another use). Beat egg whites, 1 teaspoon lime juice and the salt with a hand mixer until stiff.

Sprinkle in sugar and continue to beat until firm, glossy peaks (meringue).

With a rubber spatula, fold egg whites into coconut-flour mixture. Line baking sheets with parchment paper.

Place wafer cookies on baking sheet, about 5 mm (approximately 1/4 inch) apart. Place meringue in a piping bag fitted with a large plain tip and pipe mounds onto wafers, almost to the edge.

Let meringue dry completely, about 6 hours at room temperature. Bake on second rack from bottom of preheated oven at 175°C (fan 150°C, gas: mark 2) (approximately 350°F) until very slightly browned, 8-12 minutes. Let macaroons cool completely on a cooling rack before serving.
