- 4 Chicken breasts (approx. 160 g each)
- 3 Tbsps olive oil
- 1 cup fresh Mozzarella
- 8 Sage
- 8 slices Parma ham
- salt
- freshly ground peppers
- ⅜ cup dry white wine
- 1 ¼ cups Watercress (for garnishing)
Preparation steps
1.
Preheat the oven to 200°C, 400 F, gas 6.
2.
Rinse the chicken breasts and pat dry. Cut each breast in half. Flatten slightly with a mallet.
3.
Quickly brown each piece on both sides in 2 tbsp of hot oil. Remove from the pan and place on a lightly oiled cookie sheet.

Slice the mozzarella.
5.
Put a bacon slice, a sage leaf and 2 slices of mozzarella on each breast. Season lightly with salt and pepper and place in the hot oven for approximately 8 minutes until golden brown.
6.
Deglaze the cookie sheet with the white wine and reduce the pan sauce slightly.
7.
Rinse the cress and remove the excess water by shaking. Divide the cress equally among the plates. Place the saltimbocca along side a pour the pan sauce over the top.
8.
Serve.
