¼ cup olive oil
2 cups baby Spinach
1 cup raw Prawn (peeled and de-veined)
½ cup Pine nuts (toasted)
2 cloves garlic cloves (finely chopped)
1 Tbsp parsley (finely chopped)

½ lemon (juiced)

Preparation steps

Cook the penne pasta in a large heavy-based saucepan of boiling salted water according to package instructions until 'al dente'; usually 8-10 minutes.

Meanwhile, heat the olive oil in a 7 inch heavy-based frying pan over a medium-high heat and saute garlic for 1 minute, stirring frequently. Add the prawns and cook for 4-5 minutes until pink and tender.

Season with salt, pepper and lemon juice and remove from the heat.

Drain the pasta and transfer back into the saucepan it was cooked in. Add the spinach, prawns and

Season and add the parsley, stirring well. Transfer to serving bowls and serve immediately.
