Warm Pasta Salad with Sausages
Cook penne according to package instructions until al dente, drain. Rinse tomatoes, blanch and peel, halve, remove seeds and cut into small pieces. Rinse cucumber, cut into small sticks. Rinse and shake dry basil, pluck off leaves and chop, setting some leaves aside for garnishing. Rinse arugula and spin dry, remove tough stems and chop. Peel onion and cut into halves, cut into fine strips.
Peel garlic and dice very finely. Heat 1 tablespoon of olive oil in a large pan and lightly saute all vegetables and herbs. Add pasta and drizzle with vinegar, season with salt and pepper and set aside. Heat oil in another pan and cook sausages on high heat until golden brown. Appange sausages and warm pasta salad on plates, garnish with basil leaves and serve.
