800 grams Tomatoes
2 green chili peppers (chopped)
2 Tbsps minced cilantro
2 Tbsps sugar
½ tsp Mustard seed
4 garlic cloves (chopped)
½ tsp Asafoetida
8 Curry leaves
1 Tbsp vegetable oil

Preparation steps

Rinse the tomatoes, coarsely chop then, puree. Add 2 cups of water to the tomatoes and season with salt. Add to a pot and bring to a boil. Add the green chilis, cilantro, and the sugar. Simmer gently for 10 minutes, then remove from the heat.

Heat the oil in a small saucepan. Add the mustard seeds and sauté until they begin to crackle. Add the garlic, curry powder, and asafetida and sauté briefly. Add the mixture to the sauce and stir until combine. Serve the sauce while still hot.
