Preparation steps

1.

Peel the shallots and garlic, and finely chop. Rinse, trim, and chop the celery. Sauté the celery, shallot, and garlic in olive oil until translucent. Add the tomato paste, wine, and the tomatoes. Simmer gently for 20 minutes.

2.

Stir in half of the herbs, then season with salt, sugar, and pepper. Garnish with the remaining herbs.
