- 1 kilogram ripe Plum tomato
- 150 milliliters Vegetable broth
- 1 Tbsp Tomato paste
- 3 Tbsps olive oil
- 2 garlic cloves
- 2 shallots
- 1 rosemary
- 4 oregano
- 1 bunch Basil
- sugar
- splash lemon juice
- Sea salt
- freshly ground peppers

Preparation steps

Rinse the tomatoes, remove the core, and cut into quarters.

Peel and finely chop the shallot and garlic. Sauté in the oil until translucent. Mix in the tomato paste, then deglaze with the broth. Mix in the tomatoes, rosemary, and oregano and let simmer for 20-30 minutes. Season to taste with sugar, lemon juice, sea salt, and pepper. Remove the herbs, then add the roughly chopped basil. Divide into the prepared jars, seal well, and turn upside down to cool slightly. Turn right side up and cool completely. The tomato sauce will last at 2 months.
