Preparation steps

Rinse the tomatoes, pluck from the stems and cut each tomato crosswise on the bottom. Blanch for 2 minutes in boiling water. Remove from the water, place in an ice bath and remove the skin. Cut the skinned tomatoes into cubes. Peel the garlic and the shallots and cut into small cubes. Rinse the chilies, cut in half lengthwise, remove the seeds and finely chop.

In a saucepan, heat the oil and sauté the onion, garlic, and chile cubes along with the pine nuts for 2-3 minutes. Add the diced tomatoes and the prepared vegetables. Add the salt, pepper, sugar, and rosemary. Let simmer over medium heat for about 1 hour. Season again add the capers and serve as desired.
