200 grams Pastry flour
50 grams cornstarch
250 milliliters milk

1 ½ centimeters fresh ginger

Preparation steps

1.

Separate eggs and beat butter with sugar until creamy. Mix in egg yolks. Mix flour with cornstarch and stir into butter mixture, alternating with milk. Let rest for about 20 minutes.

Heat waffle iron and lightly grease.

Beat egg whites with a pinch of salt until stiff and fold into the batter. Peel and grate carrots and ginger. Fold into batter.

Pour 2-3 tablespoons of batter into the waffle iron and bake until cooked and golden brown. Cool on a wire rack and repeat for remaining batter. Serve sprinkled with brown sugar if desired.
