- 125 grams Macadamia Nuts (unsalted)
- 300 grams Pastry flour
- 1 tsp Gingerbread spice
- 1 tsp Orange peel
- 1 generous pinch ginger
- 1 tsp Dry yeast
- 80 grams butter (melted)
- 125 grams brown sugar
- 8 Tbsps milk (as needed)
- 2 eggs
- 1 egg yolk
- Fat (for the waffle iron)

Preparation steps

Pour the Macadamia nuts with some flour in a food processor and grind finely. Add the remaining dry ingredients in a bowl. Mix the moist ingredients (only half of the milk) and whisk together in a second bowl. While stirring, add in the dry ingredients and mix to a smooth dough. If desired, add a little milk and let the dough rest for at least 30 minutes.

Preheat waffle iron and coat cooking surfaces with some oil. Pour about 1 1/2 tablespoons of batter onto each iron, close and bake for about 3 minutes (per piece). Continue to bake the waffles all until the dough is used up.
