Sweet Carrot Waffles

Beat the egg whites with a pinch of salt until stiff.
Mix together the egg yolks and the vanilla sugar until creamy. Stir in the butter, orange zest and the grated carrots.
Mix together the flour and the oats and add to the wet ingredients alternating between the flour mixture and the juice. Leave to steep for around 10 minutes, then fold in the egg whites.
Place 2 tbsp batter in the waffle iron for each waffle and bake until golden brown. Serve garnished with grated carrots and whipped cream.
