- ½ lemon
- ½ Vanilla bean (or 1 tsp vanilla extract)
- 1 lb Strawberries
- 3 Tbsps Apple syrup (from apple juice concentrate)
- 5 ozs cold Yogurt (low-fat)
- 5 ozs cold Vanilla yogurt
- Ice cubes

Preparation steps
Juice lemon. Cut the vanilla bean lengthwise and scrape out the seeds. Set aside.
Rinse strawberries in a bowl of cool water. Lift out, drain on paper towels and pat dry. Core and chop.
In a high-sided container such as a pitcher, combine berries, apple juice concentrate, vanilla bean seeds, lemon juice, and yogurts. Puree until smooth with an immersion blender. Or blend everything in a blender.
Fill glasses with ice, pour in strawberry smoothie and stir. If you prefer a thinner consistency, stir in a little water. Serve immediately.
