500 grams green Asparagus

110 grams butter
1 tsp sugar
2 medium eggs
200 milliliters milk
300 grams Pastry flour
1 Tbsp Baking powder

Preparation steps

1.

Peel the asparagus, cut off the ends and cut into 2 cm long pieces. Blanch the asparagus in boiling salt water for 2-3 minutes with 10 grams (approximately 1/2 ounce) of butter and the sugar. Drain and rinse in cold water.

Mix the eggs, milk, remaining melted butter and a pinch of salt. Mix the flour and baking soda. Sift the flour mixture into the egg mixture and loosely fold together.

Fold the asparagus into the batter. Line a muffin tin with paper cups. Pour in the batter.

4.

Bake for 25-30 minutes at 200°C (approximately 400°F), until golden brown. Remove from the oven and let cool. Serve lukewarm.
