120 grams Feta
12 Cherry tomatoes (preferably with stem)
250 grams Spelt flour
½ tsp salt
2 tsps Baking powder
4 Tbsps olive oil
2 Tbsps Pine nuts
250 milliliters Buttermilk
1 egg

Preparation steps

Preheat the oven to 180°C (approximately 350°F). Line a muffin tin with paper cup liners.

Crumble the feta finely. Rinse the tomatoes and pat dry. Mix the flour, salt, baking powder and feta. Puree the oil with the pine nuts coarsely and mix with buttermilk and egg. Stir in the flour mixture until just incorporated. Fill the muffin tin with batter and top each with a cherry tomato, pressing lightly into the batter. Bake for about 30 minutes.

Remove, let cool slightly in the tin. Remove and cool on a wire rack before serving.
