Ingredients

Preparation steps

For the compote, bring the sugar, cinnamon, lemon juice, red wine and cherry juice to the boil in a pan. Simmer on a moderate heat for around 5 minutes. Stir the cornflour with a little cold water and add to the pan to thicken the sauce. Add the cherries and lemon zest, pour into a bowl and leave to cool.

For the waffles, beat the egg yolks with the sugar until creamy. Mix the flour with a pinch of baking powder and stir into the beaten egg yolks, alternating with the buttermilk and oil. Beat the egg whites with a pinch of salt until they form firm peaks and then fold into the mixture.

Lightly grease the waffle iron and add 1-2 tbsp of batter. Bake the waffles until golden brown, in batches. Dust with icing sugar and serve with the cherry compote.
