800 grams ripe Tomatoes
2 Tbsps Caper (in brine)
cold pressed olive oil
4 scallions
salt
freshly ground peppers
1 tsp sugar
butter

Preparation steps

Rinse the tomatoes and blanch in boiling water. Peel the tomatoes and cut in half. Remove the seeds and finely dice. Rinse and thinly slice the scallions. Heat 3 tablespoons of oil in a saucepan, and sauté the scallions over low heat. Add the tomatoes and 2 tablespoons of water to the pan. Cover and simmer for 5-8 minutes over medium heat.

Rinse the tomatoes in cold water, then add to the sauce. Cook shortly, then season to taste with salt, pepper, and sugar. Cook the spaghetti in boiling salted water until al dente. Drain thoroughly, then mix with the sauce and 2 teaspoons of butter. Garnish with freshly grated parmesan or pecorino cheese and serve immediately.
