- 1 carrot
- 1 small Parsnip
- 2 onions
- 1-2 garlic cloves
- 4 Tbsps olive oil
- 1 tsp ground oregano
- 2 tsps ground Basil
- 1 generous pinch lemon zest
- 1 can peeled Tomatoes
- Salt and peppers
- 1 pinch sugar
- 500 grams Spaghetti
- 100 grams grated Parmesan

Preparation steps
1.
Peel and finely grate carrot and parsley root. Peel and finely chop onion and garlic.

Heat the olive oil in a pan. Add onions and garlic and sauté until golden-brown. Stir in herbs and lemon zest. Stir in carrot, parsley root and tomatoes. Mash tomatoes with a wooden spoon. Simmer sauce until thickened. Season with salt, pepper and sugar.
3.
Cook spaghetti in plenty of salted boiling water until al dente, according to package instructions. Drain spaghetti. Top with tomato sauce and Parmesan. Serve with a fresh green salad, if desired.
