8 small Artichoke (woody leaves removed, tips cut off and quartered lengthways)
14 ozs Fettuccine
2 Red onions (sliced)
1 red chili pepper (finely chopped)
0.333 cup Dried Tomatoes (in oil, drained and chopped)
3 Tbsps olive oil
cup dry white wine
1 Tbsp Caper
1 Tbsp thyme
grated Parmesan

Preparation steps

1.
Cook the artichokes in salted boiling water for 10-12 minutes, then drain.
2.
Cook the pasta in salted boiling water until al dente.
3.
Fry the onions, chilli pepper and tomatoes in hot oil for 1-2 minutes. Quench with the wine, add the capers and thyme and braise for a further 2-3 minutes. Stir in the artichokes and the drained pasta (if necessary add some of the pasta water) and season with salt and ground black pepper. Serve sprinkled with Parmesan.
