- For Pastry Dough
- 1 cup all-purpose flour (plus extra for work surface)
- ½ tsp salt
- 1 pinch cayenne pepper
- 6 Tbsps butter (softened)
- ¾ cup Parmesan (grated)
- 4 Tbsps light ligth cream
- For Tomato Salsa
- 8 ripe Tomatoes (peeled; seeds removed and chopped)
- 2 shallots (peeled and chopped)
- 1 clove garlic cloves (chopped)
- 2 Tbsps olive oil
- 1 Tbsp balsamic vinegar
- salt (to taste)

Preparation steps

In a large bowl, combine the flour, salt, cayenne pepper, butter, Parmesan cheese and cream. Knead to a smooth dough. Cover in plastic wrap and chill in the refrigerator for about 30 minutes.

Preheat oven to 400ºF. Line a baking sheet with parchment paper.

For Salsa: Mix the tomatoes, shallots, garlic, olive and balsamic vinegar together. Season to taste with salt and pepper. Chill in the refrigerator.

Roll out the chilled pastry dough to a thickness of 1/8-inch. Using a heart shaped cookie cutter, cut out cookies and lay them on the prepared baking sheet. Bake for approximately 10 minutes or until golden brown. Cool on a wire rack and serve with salsa.
