1 lemon (juiced)
5 Tbsps olive oil
1 tsp lemon zest
2 chili peppers (cut into rings)
1 Tbsp fresh mint (chopped)

Preparation steps

1.
Cook the artichokes in boiling, salted water with the lemon juice for 15-20 min and then remove the fibre with spoon or paring knife.
2.
Mix together the oil, lemon zest, chillies and the mint and place the warm artichokes in the mixture. Leave to steep and serve lukewarm.
