700 grams Strawberries
½ fresh lemon (for juice)

Preparation steps

1.

Combine sugar with 150 ml (approximately 0.5 cup) of water, bring to a boil and simmer until sugar has dissolved. Cool.

2.

Rinse raspberries, combine with lemon juice, mix with cooled sugar syrup and place in a shallow dish. Cool for about 5 hours in freezer, stirring every 30 minutes, to prevent large ice crystals from forming. Beat egg white until stiff and fold into raspberries after 2.5 hours of freezing.

3.

Place sorbet into bowls and serve.
