Preparation steps

In a medium pan, combine the lemon zest, water and sugar. Bring to a boil, reduce the heat and simmer for 5 minutes. Remove from the heat and cool.

In a medium bowl, combine the cooled lemon syrup, lemon juice and sparkling water. Place the mixture in a flat shallow metal bowl and freeze for approximately 4 hours. Stir or whisk well every hour. Scoop and serve.
