Preparation steps

For the dough: Combine all the dough ingredients and knead with a hand mixer into a smooth dough. Shape the dough into a ball, wrap in plastic wrap and chill for about 1 hour in the refrigerator.

Roll the dough out about 5 mm (approximately 1/4 inch) thick on a floured surface or between two layers of plastic wrap. Cut out shapes with a cookie cutter, such as a Christmas tree cutter, and place the cookies on a lined baking tray. Bake in a preheated oven (180°C, approximately 350°F) for about 10 minutes. Remove from the oven and let cool.

For decorating: Mix the powdered sugar with lemon juice and zest to form a smooth icing. Decorate the cookies with the icing and sprinkle with ground pistachios. Let dry and serve.
