Chocolate-Pistachio Cookies

- 150 grams Pastry flour
- 100 grams ground almonds
- 3 Tbsps Cocoa
- 80 grams sugar
- 125 grams cold butter (cubed)
- 1 egg
- 100 grams dark Couverture
- chopped Pistachio (for garnish)
Preparation steps
Combine the flour, ground almonds, cocoa powder and sugar in a large bowl and make a well in the center. Add the egg to the well and distribute the butter over the top. Mix everything together using a pastry cutter or two forks, then quickly knead with hands to form a smooth dough. Scoop the dough into cherry-sized balls, place on a plate and refrigerate for about 1 hour.
Place the chilled dough balls on a baking sheet lined with parchment paper and bake in an oven preheated to 180°C (approximately 350°F) for 10-12 minutes. Remove from the oven cool on a wire rack. Melt the dark chocolate in a double boiler and dip the cooled cookies into the chocolate about halfway up. Sprinkle with chopped pistachios and return to the wire rack to harden.
