1 ⅛ cups coconut butter (or palm butter)
1 ½ cups powdered sugar
2 eggs
0.333 cup dark cocoa powder (more if necessary)
1 pinch salt
1 Tbsp instant Coffee
½ cup Pistachio (chopped)
2 Tbsps Candied fruit
cup Digestive biscuit (roughly broken)

Preparation steps

1.
Melt the coconut or palm butter in a pan and leave to cool.

Beat the eggs with the icing sugar and salt until thick and foamy. Add the cocoa, instant coffee, chopped pistachios and candied peel. Carefully stir in the coconut or palm butter. Stir in a little more cocoa powder if the mixture is too pale.
3.
Line a loaf tin with aluminium foil. Carefully stir the broken biscuits into the chocolate mixture and turn the mixture into the tin.
4.
Put into the refrigerator to set for 2-3 hours. Then turn out of the tin, cut into slices and pack in a box.
