1 kilogram ripe Peaches
3 shallots
200 milliliters White vinegar
150 grams sugar
salt
cayenne pepper

Preparation steps

Blanch the peaches in boiling water. Remove the peaches from the water and peel. Cut in half, remove the stones, and finely dice.

Peel and finely dice the shallots. Place the shallots in a saucepan with the vinegar and 150 ml (approximately 5 ounces) of water.

Add the peaches and sugar, and bring to a simmer over medium heat. Simmer the mixture for 15-20 minutes.

Season the chutney to taste with salt and cayenne pepper. Fill prepared jars to the brim with the chutney. Seal tightly and cool completely.
