2 centimeters fresh ginger
2 shallots
700 grams fresh, ripe Peaches
300 grams brown sugar
75 grams raisins
½ tsp Saffron
200 milliliters White vinegar
½ tsp Chili powder

Preparation steps

Peel the ginger and finely grate. Peel the shallots and finely chop. Blanch the peaches, rinse with cold water, peel, cut into quarters, remove the pit and cut crosswise into thin slices. Mix the peaches with the sugar, ginger, raisins, shallots and saffron in a pot and bring to a boil. Simmer over medium heat about 5 minutes, pour in the vinegar and simmer over low heat for 30 more minutes.

Season the chutney with chili powder and pour into prepared jars. Seal tightly and let stand to cool. Store in a cool and dark place.
