400 grams Tagliatelle
250 grams Smoked salmon

1 lemon
100 milliliters white wine
2 tsps finely chopped Lemon balm
2 lemons (juiced)
1 Tbsp Pastry flour
200 milliliters clear Broth
60 grams Bell pepper

Preparation steps

1.

Cook the pasta in plenty of boiling salted water until al dente.

2.

Peel the lemon with a sharp knife carefully, taking care to remove all white interior and separate out along the inner skins into fillets. Squeeze the rest of the lemon by hand and collect the juice.

For the lemon sauce, boil the white wine with lemon, then simmer for 2 - 3 minutes. Mix the lemon juice with flour and stir into the sauce. Simmer for 2 - 3 minutes. Stir in the parmesan, season with salt and pepper and pour in the cream.

4.

Cut the smoked salmon into wide strips and season with lemon juice, salt and pepper. Cook briefly in hot butter. Finally, add in the lemon fillets.

5.

Drain the pasta and serve with lemon sauce and the salmon slices on a plate. Sprinkle with thyme and serve immediately.
