250 grams thin Rice noodles
1 garlic clove
1 centimeter ginger
2 Tbsps Lime juice
2 Tbsps Fish sauce
1 Tbsp light soy sauce
5 Tbsps Peanut oil
12 size shrimp (peeled and boiled)
1 green chili pepper
100 grams soybean sprout
salt
1 Tbsp freshly chopped cilantro
1 tsp Palm sugar

Preparation steps

1.

Soak the pasta for about 30 minutes in cold water. Peel the garlic and ginger, press through a press, mix with 1 tablespoon lime juice, 1 tablespoon fish sauce, soy sauce and oil.

Rinse the shrimp, pat dry, mix with marinade and let sit for 20 minutes.

Rinse the chile and cut into rings. Blanch the sprouts in boiling water, rinse in cold water and drain.

Cook the pasta in salted water for about 5 minutes, then drain. Place the shrimp in the remaining oil and sauté for 2-3 minutes.

Mix the pasta with the chile rings, sprouts, cilantro, remaining lime juice, fish sauce and palm sugar. Season with salt and pepper. Sprinkle with nuts and serve with the shrimp.
