Preparation steps

Set the oven to broil.

Open the oysters and place on a baking sheet sprinkled with sea salt. Stir the lemon juice, crème fraîche, tarragon and the egg yolk together. Season with salt and pepper.

Spread the crème onto the oysters. Sprinkle with a little Parmesan cheese and place under broiler. Roast until tops are golden, watching carefully.

4.

Set an oyster inside a champagne glass to serve, if desired.
