1 kilogram ripe Tomatoes
1 bay leaf
1 tsp rosemary
2 Tbsps scallions
1 Tbsp red Curry paste
2 Tbsps butter
150 milliliters Orange juice
salt

Tabasco sauce

Preparation steps

Blanch the tomatoes in boiling water, then peel, and coarsely chop. Add to a pan with the rosemary and bay leaves. Bring to a boil and cook for 10-15 minutes over medium heat, until soft. Puree with an immersion blender. Add a little water if necessary. Pass through a cheesecloth-lined strainer and firmly squeeze. Let the juice drain.

Sauté the chives and curry in butter. Mix in 700 ml (approximately 24 ounces) of the tomato juice and the orange juice. Puree, then season to taste with salt, pepper, and tabasco. Serve in glass garnished with chives.
