- 200 grams Veal shank (or beef)
- 100 grams mild Bacon
- 2 chopped garlic cloves
- 1 can Red Beans about 450 grams (approximately 16 ounces)
- 1 sm jar Corn about 200 grams (approximately 9 ounces)
- 250 grams pureed Tomatoes
- sunflower oil
- salt
- freshly ground peppers
- cayenne pepper
- 8 Whole-wheat tortillas
Preparation steps
1.
Cut meat into small cubes. In a pan, fry meat in hot oil. Peel garlic and finely chop. Season with salt, pepper and cayenne pepper, depending on desired heat of final dish. Cut bacon in strips and add and cook and stir. Add beans.

Add tomato puree and bring to a boil and add corn. Cook for 5 minutes. Season with salt and pepper.

Heat 1 teaspoon of oil in a large skillet and toast tortillas on both sides. Spread each tortilla with meat mixture and roll up. Serve immediately with salsa.
