- 1 Red onion
- 2 Tomatoes
- 2 Tbsps vegetable oil
- 2 garlic cloves
- 1 small yellow Bell pepper
- 1 tsp Chili powder
- 1 tsp Cumin
- 1 tsp dried oregano
- salt
- peppers
- sugar
- 1 can Kidney beans drained (about 450 g) (approximately 15 ounces)
- 8 Whole-wheat tortillas
- vegetable oil (for frying)

Preparation steps

Peel, remove seeds and finely dice tomatoes. Peel onion and chop finely. Heat oil in a pan, add onion and sauté 5 minutes. Peel garlic and squeeze through a press. Peel the bell pepper, remove ribs and seeds and dice finely. Add garlic, pepper and tomato to the pan. Season with chili, cumin, oregano, salt, pepper and sugar and cook covered for another 5 minutes. Rinse the kidney beans and drain. Add to the vegetable mix, cover and cook for about another 10 minutes.

One by one, fry the tortillas briefly in a skillet in hot oil to make them soft. Divide the vegetable filling among the hot tortillas, roll and serve immediately.
