4 Tbsps Oil
4 cups Lamb shoulder (deboned and cubed)
1 onion (peeled and finely chopped)
2 cloves garlic cloves (chopped)
1 tsp fresh ginger (chopped)
1 tsp ground cilantro
½ tsp ground Cumin
½ tsp Garam Masala
2 bay leaves
2 cups chicken stock
2 cups dried Flageolet beans (drained)
salt

1 bunch cilantro (chopped)

Preparation steps

1.
Heat the oil in a pan and sear the meat in batches, colouring on all sides. Remove to a bowl with a slotted spoon.
2.
Sauté the onion over a medium heat until deep golden-brown – about 20 minutes, stirring regularly.
3.
Add the spices and cook for a further minute to release the flavours. Add 200ml water and simmer gently for 10 minutes.
4.
Return the meat to the pan, add the flageolet beans, season and cook gently for 30-45 minutes, or until the lamb is tender.
5.
Serve sprinkled with coriander leaves.
