- 1 Cucumber
- 2 red-skinned Apple
- ½ small lemon
- 6 ozs Chicken breasts
- 1 oz Pearl onion
- 1 pc fresh Horseradish (about 6 inches long, or prepared horseradish from a jar)
- 4 ozs Sour cream
- 4 ozs Yogurt (low-fat)
- salt
- peppers
- 7 ozs mixed Lettuce
- 1 bed Cress

Preparation steps
Rinse cucumber, peel and cut in half lengthwise. Remove seeds with a spoon and cut into 1/2-inch cubes.
Rinse and cut apples into quarters, remove stems and cores and cut into thin slices. Squeeze about 1 tablespoon of lemon juice over apple slices.
Cut chicken into thin strips.
Drain pearl onions and cut in half.
Peel horseradish and finely grate. Mix with sour cream and yogurt. Season to taste with lemon juice, salt and pepper and stir until smooth.
Mix cucumber, apple slices and chicken into dressing.
Rinse salad greens and spin dry. Place onto plates and spoon the chicken salad on top. Using kitchen shears, trim roots from garden cress and sprinkle leaves over the chicken salad.
