60 milliliters lemon juice
60 milliliters white wine
3 sheets gelatin
2 egg whites

Preparation steps

Separate the eggs and beat the yolks with the sugar until frothy. Zest the lemon. Gradually mix the zest, yogurt and wine into the yolk mixture. Soak the gelatin in cold water, squeeze and dissolve in the lemon juice in a small saucepan over low heat.

Stir the lemon juice mixture into the rest of the mousse and chill in the refrigerator until semi-solid. Beat the egg whites until very stiff and fold into the mousse, then return to the refrigerator to chill. Beat the heavy cream until stiff. To serve, top the mousse with whipped cream and garnish with grated lemon peel.
