Vitamin C can hardly be packed more refined in a dessert! With their high vitamin C content, citrus fruits such as lemon and grapefruit strengthen the body's defences. In addition, the water-soluble vitamin protects our cells from free radicals, which can be caused by stress, smoking or certain eating habits. In this case, one portion of lemon mousse covers more than half the daily requirement!

The airy mousse also goes perfectly with pomelo! If you would like to prepare the dessert for vegetarian guests, you can also use agar-agar instead of gelatine.

1 Small pot, 3 Bowls, 1 Citrus juicer, 1 Measuring cups, 1 Cutting board, 1 Large knife, 1 Tablespoon, 1 Wooden spoon, 1 Fine grater, 1 Fine-mesh sieve, 1 Hand mixer

Preparation steps

Rinse the lemon in hot water, wipe dry and finely grate the zest. Squeeze out the lemon juice. Measure 1/4 cup of juice.

Soak the gelatin in the lemon juice in a small pot until softened, about 10 minutes.

Mix together the yogurt and lemon zest.

Heat the gelatin-juice mixture over medium heat until dissolved, stirring (do not let boil). Stir 3 tablespoons yogurt into the gelatin,  then stir the gelatin-yogurt mixture into the remaining yogurt.

Beat the whipping cream with 2 tablespoons sugar until stiff peaks form.

Separate the eggs (reserve yolks for another use). Sprinkle egg whites with 1 tablespoon sugar and, using a clean mixer, beat until stiff peaks form.

When the yogurt starts to solidify, fold in the beaten egg whites until combined. Refrigerate until set, 2-3 hours.

Peel the grapefruit, following the curve of the fruit.

Separate grapefruit segments and toss with the remaining sugar and Amaretto in a bowl. Transfer fruit to plates. Using a warm spoon, scoop lemon mousse and serve on the grapefruit segments.
