- 40 grams butter (cold)
- 400 milliliters Veal stock
- 700 grams waxy potatoes
- salt
- peppers
- Nutmeg ((freshly grated)
- 2 Tbsps clarified butter
- 4 Veal sausage
- 1 Tbsp vegetable oil

Preparation steps
1.
Peel the onions, halved and cut into strips. Heat 1 tablespoon (10 grams) of butter and sweat the onions until soft. Deglaze with the stock and let reduce to half.
2.
Peel, rinse and coarsely grate the potatoes. Wrap in a damp towel. Season with salt, pepper and nutmeg. Then heat the butter in a large skillet. Add the grated potatoes, create shapes and flatten slightly. Cook until golden brown on both sides until crisp.
3.
Brown the sausages in hot oil in a pan on all sides.
4.
Mix the onion, thicken with very cold butter and season with salt and pepper.
5.
Place the hash browns on a plate, put the sausage on top and serve with the sauce.
