1 ½ kilograms starchy potatoes
1 onion
2 eggs
2 Tbsps Pastry flour
1 Tbsp finely chopped Sage
salt

Preparation steps

1.

Peel, rinse and finely grate the potatoes. Peel and grate the onion. Stir the onion with the eggs, flour, sage, 1 teaspoon of salt and pepper. Stir in the potatoes.

Heat 3 tablespoons of oil in a large pan. Pour in 2 tablespoons of the potato mixture and flatten slightly. When the edges turn brown, flip over and fry on the other side. Continue until all of the mixture is cooked. Keep the cooked hash browns warm in the oven at 70°C (approximately 160°F) until ready to serve. Goes well with applesauce or jam.
