Ingredients

For the applesauce
4 Tbsps lemon juice
1 Tbsp sugar (as desired)
2 Apple (such as, Boskop)
1 pc Cinnamon stick
1 pc organic Lemon peel
For the hash browns
800 grams predominantly waxy potatoes
2 egg yolks
1 Tbsp Potato starch (depending on potato variety)
salt
Nutmeg
vegetable oil (for frying)

Preparation steps

1.

For the applesauce, mix the lemon juice with 100 ml of water (approximately 1/2 cup), add the sugar and bring to a boil.

Meanwhile, peel and quarter the apples, remove the cores and cut the quarters into small cubes.

Add the apples, the cinnamon stick and lemon zest to the lemon broth and simmer everything until the apple pieces begin to fall apart. Set aside to cool.

Remove the lemon peel and cinnamon stick and stir again.

For the hash browns, peel the potatoes and grate finely. Wrap in a damp tea towel and squeeze out the potato juice into a bowl.

Mix the grated potatoes with the egg yolks and the potato starch and season with salt and nutmeg.

Fry the mixture in flattened portions in some oil for 2-3 minutes on each side until golden brown. Drain on absorbent paper.

4.

Serve the hash browns immediately with the applesauce.
