Preparation steps

1.

Peel the potatoes, rinse and grate finely. Wrap in a kitchen towel, squeeze the excess moisture into a bowl and let stand until the starch settles to the bottom. Drain off the liquid and toss the starch with the grated potatoes. Season with salt and nutmeg.

Heat 1 tablespoon oil in a large nonstick skillet, add 4 piles of potato mixture, flatten slightly and fry until golden brown, around 2-3 minutes per side.

In a separate pan, heat the remaining oil and fry the eggs to your liking. Season with salt and pepper.

Serve the hash browns and eggs with lettuce, if desired.
