1 Rinse cucumber thoroughly with hot water and pat dry. Halve lengthwise and slice into pieces.
2 Halve melon and scoop out seeds with a spoon. Cut into wedges, remove peel and chop coarsely.
3 Rinse kumquats thoroughly with hot water and pat dry. Cut one kumquat into slices and set aside.
4 Cut remaining kumquats into quarters. Using an electric juicer, juice quartered kumquats, cucumber and melon. Pour into a large glass and garnish with reserved kumquat slices.
