1 kilogram ripe red Apricot
1 ½ Tbsps lemon juice
500 grams jam sugar (2:1 ratio)
1 red chili pepper

Preparation steps

1.

Rinse, halve, and remove the pit from the apricots. Puree the fruit with the lemon juice. Add with the jam sugar to a large saucepan and thoroughly incorporate. Cover, and let infuse for 1 hour.

Rinse and slice the chili. Add to the apricot mixture and bring to a boil over high heat. Cook for 4 minutes, stirring constantly. Remove from the heat.

3.

Fill clean jars to the brim, and seal the lids tightly. Turn upside down and cool for 5 minutes, then turn right side up and cool completely.
