1 kilogram Apricot
1 organic Orange (juiced and zested)
1 Cinnamon stick
1 Vanilla bean
500 grams jam sugar (2:1 ratio)

Preparation steps

Rinse the apricots, remove the stones, and finely dice. Add the apricots, orange juice, orange zest, and cinnamon to a large saucepan. Slit the vanilla bean lengthwise, scrape out the seeds, and add both to the apricot mixture. Add the jam sugar and mix well. Let the mixture infuse for at least 1 hour.

Bring to a boil over high heat, stirring constantly. Cook for 4 minutes, until the jam begins to thicken. Remove the vanilla bean and the cinnamon, and fill the prepared jars to the brim with the jam. Seal tightly, and turn upside down for 10 minutes to cool slightly. Turn right side up and cool completely.
