1 Trim lettuces, rinse, spin dry and tear or cut into bite-sized pieces.
2 Coarsely chop hazelnuts and toast lightly in a pan.
3 Stir the vinegar, mustard and apple juice together. Season with salt and pepper to taste. Whisk in the oils.
4 Rinse and dry apple. Peel, quarter, core and cut the apple into very thin slices.
5 Rinse chives, shake dry and cut into 3-cm (approximately 1 1/4- inch) long pieces.
6 Mix lettuces, apple slices and dressing together. Distribute on plates, add chives and sprinkle with the hazelnuts.
