- 1 red Oak leaf lettuce
- ½ Batavia lettuce
- ½ Frisée
- 1 oz Hazelnuts
- 3 Tbsps Red wine vinegar
- 1 Tbsp Dijon mustard
- 1 Tbsp Apple syrup
- salt
- peppers
- 3 Tbsps Canola oil
- 2 Tbsps Hazelnut oil
- 1 large tart Apple
- ½ bunch Chives

Preparation steps

Trim lettuces, rinse, spin dry and tear or cut into bite-sized pieces.

Coarsely chop hazelnuts and toast lightly in a pan.

Stir the vinegar, mustard and apple juice together. Season with salt and pepper to taste. Whisk in the oils.

Rinse and dry apple. Peel, quarter, core and cut the apple into very thin slices.

Rinse chives, shake dry and cut into 3-cm (approximately 1 1/4- inch) long pieces.

Mix lettuces, apple slices and dressing together. Distribute on plates, add chives and sprinkle with the hazelnuts.
