Preparation steps

Peel the white asparagus and cut off the ends. Rinse the green asparagus and cut off the ends. Cook the white asparagus for 20-25 minutes in boiling salted water with the spices. Add the green asparagus and cook for about 10 minutes.

For the lime hollandaise: Melt the butter in a pan. Mix the yolks, orange juice, and lime zest. Beat in a bowl over hot water until foamy. Remove from heat and gradually stir in the melted butter in a smooth stream. Season with salt, pepper, and lime juice. Garnish with orange and lime zest.

For the vinaigrette: Peel the egg and finely chop. Mix in the oil, vinegar, and spices. Rinse the herbs and chop finely. Mix with the egg for the vinaigrette.

For the nut butter: Toast the nuts in a dry pan and coat with water.

Serve with smoked salmon and various types of ham arranged on plates.
