1 kilogram green Asparagus
extra-virgin olive oil
balsamic vinegar

Preparation steps

Rinse the asparagus, cut off any woody ends, and blanch in boiling salted water until tender, about 10 minutes. Drain well. Slice asparagus in half lengthwise and place on 4 plates. Whisk together 8 tablespoons olive oil and 4 tablespoons balsamic vinegar into a vinaigrette. Season with salt and pepper. Drizzle the vinaigrette over the asparagus.

Rinse the arugula and pat dry. Place on top of the asparagus. Peel the eggs and chop as finely as possible. Sprinkle the minced eggs over the asparagus and arugula. Serve immediately, with fresh crusty white bread if desired.
