Ingredients

3Garlic clove
1 piecefresh Ginger root (4-5 cm long)
3 tablespoonsfermented black Beans (canned)
1 bunchScallions
3.3 poundslarge Clams
3 tablespoonsRice wine
1 cupChicken broth
1 ½ tablespoonsSoy sauce
1 pinchSugar
2 tablespoonsVegetable oil
1 teaspoonChinese chili paste or Sambal oelek
2 teaspoonsSesame oil

1 Small bowl, 1 Wok, 1 Measuring cups, 1 Cutting board, 1 Large knife, 1 Small knife, 1 Tablespoon, 1 Teaspoon, 1 Wooden spoon, 1 Sieve, 1 Lid

Directions

Display mode:
1 Peel the garlic and cut into thin slices. Peel ginger root, cut into sticks. Mash black beans lightly with a fork. Trim scallions, rinse and slice into thin rings.
2 Sort through and discard any opened clams. Thoroughly rinse closed shells under cold running water.
3 Combine rice wine, stock, soy sauce and sugar.
4 Heat the oil in a wok or large frying pan. Sauté garlic and ginger while stirring for 1 minute.
5 Stir fry clams in wok for 1 minute. Add black beans, chili paste and rice wine. Cover and bring to a boil.
6 Cook until all the clams have opened, 6-7 minutes. Discard any shells that remain closed. Combine sesame oil and scallions and pour onto clams. Serve immediately.
