500 grams Semolina
3 eggs
180 grams sugar
200 grams Yogurt (0.1% fat)
200 milliliters vegetable oil
1 pkg Baking powder
1 Tbsp Pastry flour
100 grams chopped Walnut
750 grams sugar
1 tsp lemon juice
vegetable oil (for the baking pan)

Preparation steps

Beat the eggs and then mix with the yogurt, oil, and 180 grams (approximately 1/2 cup) sugar. Mix the flour and baking powder in a separate bowl and then add to the egg mixture to make a smooth paste. Stir in the chopped walnuts. Turn dough out into a greased baking pan and smooth. Bake in a preheated convection oven at 160°C (approximately 325°F) for about 50 minutes, until golden brown. Remove from the oven, drizzle with a little water and let cool.

Bring sugar with 750 ml (approximately 3 cups) of water to a boil and simmer for about 10 minutes to make a simple syrup. Remove from the heat, stir in lemon juice and allow to cool. Pour over the cake and allow to cool fully. Cut into small squares and serve garnished with walnuts.
